Veggie Rice

3 cups chicken broth or water
1 medium onion
2 celery sticks
2 medium carrots
3 cups fresh or frozen cup op vegetables (broccoli, peas, corn, green beans, peppers, zucchini, mushrooms, asparagus...etc... WHAT EVER YOU HAVE OR LOVE!)
1 tablespoon olive oil or butter
1 teaspoon sea salt
1/2 teaspoon garlic
1/4 teaspoon pepper
1 1/2 cups brown rice, uncooked

In a saucepan, combine the chicken broth, vegetables, and olive oil. Bring to a boil. Add rice. Reduce heat, cover, and let simmer for 40 minutes.
