Although I love to cook and create in the kitchen I also love the beauty of a simple meal. Hummus and Veggies is a simple go to snack or meal at our house. And after a busy day of napping and cleaning I wanted a quick, simple, light clean up meal. The boys love to dip and see who can create the largest mountain of veggies and hummus on top of a flaxseed cracker, that still fits in the mouth! The conversation is so genuine between smiles and laughs and licking fingers of hummus.
... a perfect dinner
Hummus
1 can chickpeas (garbanzo beans) drained, rinsed
1 lemon, juiced
1-2 tbsp olive oil
1-2 tbsp tahini
1 clove garlic
1/2 tsp sea salt
1/2 tsp cumin
1/4 tsp paprika
Mix all ingredients in a food processor until smooth. Create different flavors by adding additional herbs, spices, or veggies.
