Pumpkin Bars

My Mom makes the BEST pumpkin bars! They are Alex's favorite! I have never actually attempted pumpkin bars before, but the cool fall weather and football season sparked my taste buds. And as you can see from the picture they went over well! (we also gave some to neighbors next door)

Here is my version of my Mom's Pumpkin Bars

2 cups sprouted Whole Wheat Flour (any flour works)
1/2 tsp sea salt
2 tsp Baking Powder (Aluminum Free)
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Pumpkin Pie Spice
1 cup Sucanat (dehydrated cane juice)
1 Honey Crisp apple pureed
1 cup Coconut oil, melted
4 eggs (free range organic)

Combine flour, salt, baking powder, baking soda, cinnamon, spice in a large bowl. Beat sucanat, apple puree, oil, pumpkin and eggs with a mixer until incorporated. Add dry ingredients and mix. Bake in greased and floured 11 x 15 pan at 350 degrees for 20-30 minutes.

Frosting
1-8ox pkg full fat cream cheese, softened
4 TBSP butter, softened
1 TBSP vanilla
1/2 cup raw honey
1/2 cup coconut flakes (optional)

Beat ingredients together and spread on top of cooled pumpkin bars.
