3/4 cup whole wheat flour
3/4 cup oat bran
1/4 cup unsweetened Cocoa or carob powder
1 teaspoon baking powder
1 teaspoon baking soda
1 egg
1/2 cup pure maple syrup
3 tablespoons olive oil
1/2 cup apple juice
1/2 cup applesauce (unsweetened)
2 teaspoons pure vanilla extract
1/4 teaspoon almond extract
2 1/2 tablespoons chopped walnuts
2 1/2 tablespoons carob/chocolate chips
Preheat oven to 350 degrees. Lightly oil a 8-inch baking pan. Mix all dry ingredients, excluding walnuts and chips, in a bowl. Blend all wet ingredients and then add to dry ingredients. Mix well. Fold in walnuts and carob chips. Bake 40 minutes. Cool in pan and cut into squares before serving.
