Garden Tuna Melt

1/2 cup chopped celery
1/2 cup healthy mayonnaise substitute*
6 1/2 oz drained white meat tuna
4 whole grain/ sprounted rolls, split and toasted
8 green pepper rings
8 slices ripe tomatoes
2 slices rice cheese (mozzarella)
2 tablespoons sliced green onions

Heat oven to 350 degrees. In a medium bowl stir together celery, mayonaise substitue and tuna. Place rolls on cookie sheet. Spread tuna mixture on rolls. Layer each with one green pepper ring and one tomoato slice. Bake for 10-12 minues. Remove from oven. Top with one slice of rice cheese. Garnish with green onion. Continue baking for 1-2 minutes or until cheese melts.
