Mayonnaise

makes 1 1/2 cups

2 egg yolks
1 tablespoon apple cider vinegar
1 teaspoon dry mustard
1/2 teaspoon salt
1 1/4 cups olive oil

In a food processor, combine egg yolks, apple cider vinegar, dry mustard, and salt. Mith machine running very slowly andd olive oil through the feed tube.
Tip: you can also mix in a bowl with a whisk, adding the oil drop by drop at first and then graduating into a thin stream.
