Overnight Waffles

4 cups oatmeal (rolled oats/ old fashion oats)
1/4 cup whole wheat flour
1 tablespoon plus 1 teaspoon baking powder
2 teaspoons ground cinnamon
4 cups almond, rice, or raw milk
3 tablespoons olive oil
2 teaspoons pure vanilla extract

Mix all dry ingredients in a bowl. Blend all wet ingredients in a blender and then add to dry ingredients. Cover and chill overnight.

To prepare: Preheat a well-oiled iron. Batter should be thick. Spoon batter onto hot iron. Close iron and cook 4-6 minutes.

Drizzle lightly with pure maple syrup, strawberry syrup or top with your favorite fruit topping. (waffles can be refrigerated or frozen and later reheated or toasted.)
