Pancakes

Makes 6-8 pancakes

1/2 cup oat flour (blend old fashion oats on high in a blender until you have at flour)
1/2 cup whole wheat flour
*you can use 1 cup of WW flour if you don't ahve a blender to grind the oats)
2 tablespoons baking powder
1 tablespoon honey
1 cup almond, rice, coconut or raw milk
1 tablespoon olive oil
1 egg
1 teaspoon pure vanilla extract

In a bowl, mix all dry ingredients. Mix together in a seperate bowl all the wet ingredients. *Blend the wet ingredients in a blender if you have one, and then add to the dryingredients. Mix well.

Preheat a skillet, lightly oil. Drop batter onto pan, using 2 tablesppons for each pancake. Turn pancakes when bubbles form on the top side. Cook until golden brown on both sides.

Optional Add-ins just before cooking:
1/2 cup Pumpkin Puree
1/4-1/2 cup blueberries
1 banana cut up
1/4 cup chopped nuts

Top pancakes with 100% pure maple syrup, butter, yogurt, or strawberry syrup (see recipe below)

Strawberry Syrup
16 oz frozen package or 1 pint of fresh strawberries
2-3 tablespoons honey
Heat strawberries and honey in a sauce pan until hot. Do not boil. Pout into blender. Mix for 1 minutes on lowest setting. Serve immediately.
